If that he the case then, shouldn’t we expect the man to keep going up in the air indefinitely? Bear in mind there is no force opposing him from any other object?

There's that small matter of gravity. So it pulls him down to the pool.

Coz he still has motion acting in the x-direction. If we ignore drag(since the distances involved aren't significant), then he will travel at the same speed as the car.
