Actually it's the cooking style.
Pilau/pulau is cooked with the meat, potatoes can be added, mostly eaten with kachumbari. The specific Spices give it the brownish colour.
Biriani is a tricky affair, hata wahindi wenyewe wana ukora.
Biriani is basically white rice with a dash of saffron and some spices, normally cloves, cinnamon, cardamom.
In KE people use food colour instead of saffron.
The key is in the gravy,normally thick, different ingredients determine the flavor.
The Indians will make the rice and gravy separately, then mix them up in layers in the sufuria.
The swahili will do them separate and serve the plate with rice and up with the thick gravy on top.
What gives Biriani its name, beats me to date. Is it the type of rice used or the gravy!
