Matoke is generally cooked bananas, they are rich in carbohydrates
Below is a recipe of how you can prepare matoke;
Ingredients
Green Banana(preferred quantity)
2 tomatoes
1 onion
Tomato paste
Cooking oil
Salt
Spices of your choice
Procedure
Peel of the banana using a knife of a fork
Apply oil on your hands and your knife while peeling to avoid the bananas from turning black
Cut the peeled bananas into your preferred sizes
Chop the onion and tomatoes into separate bowls
Pre-heat your sufuria and add oil
If the oil is heated to your preferred temperature, and the chopped onion and stir until it turns golden brown
Add tomatoes and salt then stir until it is ready
Add tomato paste and your spices then stir to your preferred paste
Deep the sized bananas and stir Stir the banana in order for it mix with the ready paste
Add enough hot or cold water, (I prefer hot water since it allows the banana to cook well and at a shorter time)
Leave it to cook until it is soft and ready to eat
Serve it hot with beef, matumbo or chicken
