Given any weight and the gravitational constant, you can derive the mass, which is a constant. These spring scales work this way to get mass. Note that the spring won't work in Mars unless recalibrated.

The variation of g at any point on earth is negligible for all practical purposes, therefore the spring scale is accurate.
