First of all smoke ads a lot of flavor to the meat, there is some chemical reactions caused by burning wood which enhance the flavor and scientists don't fully understand them. My point is, go with the tried and tested method which our ancestors used.

Agreed @Ole Waru, lazima that burn tastes to make it a grill. Stima meat isnt as tasty, they even have what we call liquid smoke to try get that flavor.
